Know Your Cuts of Caribou Meat!

This poster was on the wall of the kitchen in Sir John Franklin High School in Yellowknife, where we spent the second day of my conference. Our breakfast and lunch were served here, although sadly there was no caribou on the menu (just delicious Arctic ham, cheese, and turkey). I could have been in any high school kitchen anywhere in the south, until I looked up and saw this poster, which was a striking reminder that I was in fact in the north.
